Kitchen Witch Chronicles, Volume 2
Okay, y’all. This one snuck up on me.
I wasn’t even that excited about it at first. But after I took one bite of this frozen pineapple magic, I could feel my cells say, “Finally.” Like my eyeballs legit got their moisture back.
So obviously… I had to blog it.
🪄 The Magic (Makes 1 pint – about 2 servings)
Ingredients:
- Frozen chopped pineapple (fill to the Creami line — the better the pineapple, the better the whip)
- ⅓ cup hot water
- 2 scoops collagen
- Pinch of salt
- ¼ cup honey(⚡ We’re keeping this energetically light. Read why in my Sweetener Spectrum blog post.)
- ½ cup coconut water
- Thai Kitchen coconut milk (the carton kind — pour to fill line)
- Optional: 1 tbsp MCT oil or coconut MCT
🌀 Instructions:
- Dissolve collagen into your hot water. Stir in honey + salt.
- Mix in the coconut water.
- Pour that magical elixir over your frozen pineapple.
- Top with Thai Kitchen coconut milk until it hits the fill line.
- Optional: Add 1 tbsp coconut MCT for extra luscious vibes.
- Blend gently (automatic whisk works great).
- Freeze 12–24 hours.
🧊 When You’re Ready to Serve:
- Rinse the outside of the pint in hot water until the edges loosen.
- Pop it into the Ninja Creami.
- Use Sherbet Mode.
- Don’t lie to yourself — you’ll probably need a Re-Spin to get that silky whipped texture.
(✨Pro tip: If your pineapple is weak — like mine was — you can dig a little hole in the middle post-spin and pour in a splash of pineapple juice or fresh pineapple chunks. Optional, but yum.)
